Refine mission wording in profile README
Update profile/README.md to clarify project values: replace the Tolkien quote with a Santayana quote, change “open source internet” to “free and open internet,” and add a new note urging users not to trade rights for convenience (emphasizing ownership, privacy, and agency). Also remove a stray trailing hyphen and apply minor formatting cleanup.
